Recipe: Chocolate Avocado Mousse

When my schedule allows on Wednesday night the kids and I do a Facebook live recipe.  Addi enjoys helping me out and it allows me to show that I do teach healthy eating, but don't have time to blog recipes since I am with clients and my kids all day.  

These videos stay up on my business Facebook page, Sarah Moore Health, but I am also going to start sharing them here.  I hope you enjoy, make them, share, tag and have fun with getting healthy!

Chocolate Avocado Mousse

2 ripe Avocados

1/2 tsp of vanilla extract 

1-2 tsp of coconut oil

1.5 tablespoons of cacao powder

1 dropper full of vanilla stevia (or use coconut sugar or maple syrup)

dash of sea salt 

Remember avocados come in different sizes, adjust the flavor accordingly.

Open avocados remove seed scoop into a food processor. Add remaining ingredients. You might have to adjust cacao powder and stevia to your taste preference as you blend.   You may want it darker or sweeter.   Place in whatever cute dish you would like, top with goji berries and cacao nibs and dig in!

Cacao: Bring the Love In

Chocolate is enjoyed by almost everyone.  Dark, milk, white chocolate most people know their preference when asked.  What many people do not know is that real raw natural cacao is so good for you.   We have been fooled to look at chocolate only as a dessert of treat.  We have not been taught to view it as a pleasurable food that is also a healthy dessert. 

Hershey's screwed it up for everyone, when the general population thinks a bar filled with sugar and milk is chocolate. At the state of a candy bar there is nothing of positive nutritional value in the chocolate they serve. 

Raw Cacao is an amazing superfood that starts out in a pod, each pod has cacao beans inside.  Each of those beans can be crushed to be cacao nibs or made into a fine powder which is cacao powder. It is very dark and biter but full of antioxidants and minerals. 

Cacao contains a high content of magnesium and will stimulate the release of endorphins. This is why cacao is considered a bliss food and also relaxing. It is very good for depression and mood swings. It also contains an amino acid called Theobromine, which will open up the capillaries. Anything that is taken with cacao is absorbed at a higher rate.  This also helps to support the heart chakra.  This is why many believe cacao to be a heart opening food, spiritually.  It allows us to take in more love.

A few of my favorite things

I am on the go a lot. I have my business, raise and school my babies and also practice regular self care. I like food that is functional and also satisfies me.

What do I mean by functional?  Food that does more than provide just protein carbs and fat, but also gives my body nutrients, superfoods and herbs.  I also like to know that if I pop in anywhere almost, when I forgot to plan, I have an option.  

So lets get started,

1. Addictive Wellness Chocolate:  I met Sage and Ana Blanca at the Longevity Conference put on each year by David Wolfe.  They created a sugar free chocolate with amazing herbs and superfoods. One circle chocolate is potent enough to give you a dose of what you need based on the chocolate you are eating.  There is love and magic in these chocolates, I know :)

2. Cultured Veggies & Sauerkraut: I love taking some Brads Raw Chips and some ferments and having my lunch or snack with them together. Fermented Veggies are wonderful for your digestion and are a great probiotic source. Now I will mention they do have an off setting odor to many, but the taste and benefits are so amazing, I don't worry about the odor. 

This is a local company I just found in our Whole Foods.  I really really enjoy Harvest Roots Ferments. 

3. Kind Bars:  There is really no bar that is perfect. If they are raw they have dates and tons of sugar. If they aren't they still have tons of sugar.   Kind bars aren't perfect but they are almost everywhere.  I would rather sub the sugar for fat, and I am able to do that with there low sugar options.   Next time you have to stop while traveling and get a snack, look for Kind, there is a likelihood you will find it. 

4. Spring Water in glass: If you follow me on social media you will know weekly the kids and I go to a local spring by our house.  We add water to our yeti's and also to a 5 gallon jug. We exclusively drink it and love it.  If I am out of my morning fill up and I am in whole foods I usually grab Starkey's. If you have not drank fresh spring water, there is nothing like it.

Don't wait for Easter

Really when you think about it, this has been the best 4 months for candy makers!  Christmas, Valentines Day, Easter, all fill the shelves everywhere with candy. Lets be honest, if you have eaten real chocolate or the kind some of my friends make that are sugar free and also give you amazing herbs and superfoods, it is not hard to ignore the crap candy.

First I am a mom, and as any moms know sugar draws your kids in. Addi my oldest I say could live off cheese and sugar.  So I have to monitor and limit it.  Yes, we only carry organic of both but they are still sugar and dairy.   So for me to indulge her I let her make these awesome superfood eggs and she doesn't have to ask to eat them.  

 

 Here is her recipe, and it will make 24 eggs, depending on the mold you use. 

1 cup of raw cacao powder.

1 cup of coconut oil (virgin unrefined) 

2 tsp of spirulina 

1/2 or less of pure maple syrup

nut butter of your choice. I use almond and Addi uses peanut butter 

any other superfoods you want to add to the chocolate.  Chia seeds work great or other powders that will mix well like Maca. 

Mix the above ingredients until it is smooth. Your coconut oil may chunk up if the maple syrup is cold so you will need to place your glass bowl next to a burner on the lowest heat to smooth it all out.  

We then place a small amount in the bottom of each egg and throw it in the fridge or freezer. Once it is hard add in a small amount of nut butter, or a large amount :). Place in fridge.   Remove once it is hard and add your top layer of chocolate.  Place back in fridge and you are done once they are hard, usually around 10-15 min.  

As you can see you are only getting maple syrup that is a "negative". You could sub with stevia, honey, or xylitol.   These are perfect to replace a standard chocolate egg, or the cadbury. You have just given Reeses a run for their money.   Enjoy! 


Perfect Addiction

Who does not love a healthy addiction?  I can't say I am really addicted to anything. My husband may say my iPhone, and goji berries but not many things are out of my control. Well, darnit, I ordered this chocolate and now its almost gone! 

I am addicted to the amazing raw chocolate from Addictive Wellness!!! I met the owners in April at the Longevity Conference put on by David Wolfe.   Sage was working with us at the Tonic bar and his beautiful better half Anna Blanca, was hustling her little tail off getting this chocolate into everyones hands that would take it, and why would't you take it?  I only tried one piece and said I would take some home, and never did!  

As I follow Sage and Anna on Facebook and instagram I realize what amazing people they are. They not only have an wonderful product but they are full of love.  Let's take note, their logo has a unicorn in it, how much more magic do you need after a unicorn?  :)  What I find in people who are full of love and create edibles, is you feel the love when you eat it.  So I had to order!!!

I bought the multi pack so I could try each kind, Tranquility, Energy, and Beauty. I am very familiar with superfoods, but I am working on my super herbs and medicinal mushroom knowledge.   These three are packed with the above, but free of all things, that typically ruin chocolate: Gluten, nuts, sugar, dairy, soy, gmo, and trans fat..  

I can not pick one as my favorite and  only one remains of each,because I am passing them on to a friend.  Full of nutrition, herbs, amazing fat, non gas forming birch Xylitol, and love, it is a chocolate you could eat a lot of and not feel guilty.
