Cauliflower Avocado Stack

Join me in the kitchen as I show you how to make a simple meal with a fun presentation. When you incorporate more plants into your diet you get more nutrition to fuel your body. You do not have to be a vegan to be plant based. You are simply choosing to incorporate more plants and less animals. This meal is so easy to do that with. Cauliflower rice, avocados and cucumbers. You get to decide if you want vegan meat or animal to top it off. I hope you make and enjoy!

Vegan Caesar Dressing

I am not a Vegan but I do know that many vegan recipes will leave out the crap, and by crap I mean dairy.   This recipe is great with traditional romaine lettuce or by doing a kale Caesar salad. 

1 Avocado 

1/4 cup water 

4 cloves of garlic minced/chopped 

1 tablespoon of dijon mustard 

2 tablespoons of Nutritional Yeast 

1 tablespoon of apple cider vinegar 

1/2 lemon juiced

1/4 tsp sea salt pepper to taste

Throw in vitamix or blender until smooth. You can also add this all to a food processor and get the same results.  

Add to finely chopped romaine for a healthy Caesar Salad

Recipe: Butternut Squash Soup

Butternut Squash Soup. 

Tonights facebook live is a recipe i have had in all of my cleanses.  It is great for super cold days like today and also great when you need a sweet comfort food, so to speak. 

Most of the work comes from prepping the squash. You can now buy the squash already prepped if you are in a pinch in most grocery stores. You may pay a little more but it is worth the time if you don't have it to spare.

Once this work is taken care of the rest is pretty easy sailing. 

Recipe:

1 pound peeled butternut squash, cut into chunks

1 medium onion, sliced 

 red apple cut into chunks  

1 1/2 cups of veggie broth

1 tsp sea salt  

Pumpkin spice or cinnamon, cloves, or even Italian herbs or dill · 

1/2 cup of canned coconut milk 

option of honey, maple syrup or coconut sugar for a sweeter version. 

Stick all the ingredients into a high speed blender except milk and herbs. Blend on high for 10 min ( if you want it hot and steamy) then mix in milk and herbs when done.  Play with your flavors and spices to get it exactly where you want it.  If you are choosing to keep it raw, you will need to blend it for a good amount of time in your vitamix to get it warm and creamy.   Enjoy!

Recipe: Buffalo Cauliflower Bites

Cauliflower Buffalo Bites
1 cup of paleo flour ( almond, coconut, cassava) 
1 large head of cauliflower cut into bites
1/2 cup of non dairy milk
1/4 cup water
spices for flour: turmeric, salt, pepper, paprika
Paleo Hot wing sauce, or any hot sauce

Make your flour mixture with spices.   begin mixing in the liquid. this is the time you may need a little more or less depending on the type of flour you chose.  Once you have a consistency almost like pancake batter, begin dipping your cauliflower pieces in the batter.   Place coated cauliflower on a lined or greased baking sheet.  Place in the oven on 425 for 10-15 min.  Remove from the oven and place your buffalo sauce on the cauliflower.   Place back in the oven for another 10 min until you begin to see or feel it is crispy. Remove and allow to cool.  Enjoy! 
(paleo sauce I used: Steves Paleo Goods Wing Sauce)

Recipe: Chocolate Avocado Mousse

When my schedule allows on Wednesday night the kids and I do a Facebook live recipe.  Addi enjoys helping me out and it allows me to show that I do teach healthy eating, but don't have time to blog recipes since I am with clients and my kids all day.

Chocolate Avocado Mousse

2 ripe Avocados

1/2 tsp of vanilla extract 

1-2 tsp of coconut oil

1.5 tablespoons of cacao powder

1 dropper full of vanilla stevia (or use coconut sugar or maple syrup)

dash of sea salt 

Remember avocados come in different sizes, adjust the flavor accordingly.

Open avocados remove seed scoop into a food processor. Add remaining ingredients. You might have to adjust cacao powder and stevia to your taste preference as you blend.   You may want it darker or sweeter.   Place in whatever cute dish you would like, top with goji berries and cacao nibs and dig in!
